Eve’s Garden Chardonnay
A sun blessed summer led to harvest on September 26th and 29th for the 2017 vintage. Sixty five percent of the blend came from the north Block Dijon 76 fruit. The remainder introduces new field grafted Dijon 95 fruit for the first time. Added complexity is achieved by combining native and proprietary yeasts. Fermented in French oak, no new barrels are allowed in this cuvée. The typical minerality and crisp acidity we expect in “Eve’s Garden” is enhanced by the mid-palate complexity of the Dijon 95 component.
